Tasting Notes

On the nose:
it's very addictive. You just want to keep smelling it. You get Hibiscus, sweetness like dried cherries but also toasted sugar like creme brulee. There are notes of coffee and caramel with a touch of fresh leather.

On the palate:
The palate gives raisins, stone fruit and mild tannis. The brulee from the nose comes through on the palate with flavors of bruleed honey and a custardy mouth feel.

The finish:
strong tropical fruit. Passionfruit or Dragonfruit. Something exotic.

This small batch has been double oaked in our previously used 16-year BUFF/TURKEY barrels, 126 proof.

Creamy vanilla, strawberry raspberry. Chocolate covered cherry cordial with a touch of lemon zest. Plum cake.

A wannabe sweet Rye. Vanilla Cupcake, Graham Cracker, Faint caramel and carrot cake.

The finish:
Slight spice, lingering toasted marshmallow.

This small batch has been double oaked and is bottled at cask strength, 117 proof.

Tasting Notes

On the nose:
Floral notes of honeysuckle, pear like fruit and vanilla. A kiss of oak spice and leather. Essence of mahogany.

On the palate:
The front palate has strong notes of wood and brown sugar with a touch of cinnamon bark. The mid palate is full of red berries and cardamon with a custardy mouth feel.

The finish:
A long lingering brown sugar with a touch of rye spice. Savory and herbaceous towards the end. Lingering apple peel on the tongue.
